Healthy cheese blintzes? It doesn't have to be an oxymoron! Just stick to wholesome ingredients that pack in protein and fiber with proper nutrition.
The ingredients for these blintzes resemble the ingredients we've used in some of the other healthy pancake recipes we've shared.

- 1 egg
- 1 banana
- 1 cup of gluten-free oats
- 1/4 cup of amaranth flour
- 1 cup of coconut milk
- 1 tbsp of baking powder
- 1 tsp of coconut oil
- 1 tsp of honey
- 1 1/2 tbsp. of organic, whole-milk ricotta*
- Dash of cinnamon
- Organic strawberries, sliced (I used two in the photo)
- Honey (as much as you need to lightly coat the cheese)
*The whole milk-ricotta can be replaced with a cheese of a similar consistency, like cottage. You can also replace the ricotta with greek yogurt, or a vegan cheese if you so wish.
Blend all ingredients into a mixture. Pour coconut oil into sauce pan and heat over a low flame until evenly distributed throughout. Pour mixture into pan, with just enough to coat the pan. You want the blintzes to be as thin as possible, so they can be easily rolled. When small bubbles form throughout, flip and cook the other side until it becomes golden brown. Remove blintzes from pan and allow to cool for several minutes. Add filling to one of the outer edges and neatly roll. Add blueberries or other berries for toppings if you so wish.
