- 1/4 cup of Sunwarrior Vanilla protein powder
- 3/4 cup of quinoa flour
- 1/2 cup of Unsweetened Vanilla Almond Milk
- 2 eggs
- 1 tbsp ground flax seed
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
I blended the ingredients in my Nutribullet for about 30 seconds before pan-frying each side of the pancake in coconut oil until golden brown. I then topped the cooked pancakes with 1/4 cup of frozen blueberries (frozen ones are typically cheaper than those sold at room temperature, and can contain more antioxidants since they are frozen at their optimal level of ripeness.) I also poured on a modest amount of organic maple syrup. Did you know that a small amount of maple syrup can keep your heart healthy and boost your immune system ? You can thank its high levels of zinc and manganese for that.
If these aren't sweet enough for you, feel free to add 1 tsp. of stevia or honey to the mixture. Just be cautionary about the amount of sugar you're adding and the amount of sugar you already intake with your diet.
