When looking up healthy recipes, I stumbled across pizza made with cloud bread and thought I was seeing things. When I Googled the recipe, I was surprised to see a number of recipes and articles pop up for this bread that seemingly fell from the sky. I couldn't believe that I hadn't heard of it, especially considering it was grain-free! Although I don't follow a completely grain-free diet, I feel much better when I limit them, noticing a decrease in allergies, fatigue and even body pain.
For those of you like me that aren't familiar with cloud bread, here's what's it contains: eggs, softened cheese (like cream cheese) and a bit of cream of tartar. Light and spongy, the bread is said to be great for sandwiches or as a hamburger bun replacement. Spices like cinnamon, nutmeg and garlic powder can be added for additional seasoning, as can honey and stevia (if you're looking for a sweeter snack.)
Here's the thing, although it's grain-free, it's not paleo (as paleo doesn't include any processed food, like dairy.) Secondly, although it might be safe for those with gluten allergies and/or problems digesting grains, dairy is another common allergen, causing indigestion in the majority of the population.
From the sound of it, it seems quite easy to make. Here's a recipe. I tend to prefer airy to dense breads anyway, so I'll have to give it a try!
