*Makes about 18 energy balls, 2 of which are definitely a sufficient snack depending on your caloric intake for the day
- 1 1/2 cups of rolled oats
- 1/2 cup of peanut butter
- 1/4 cup of sunflower seeds
- 1/8 cup of coconut oil
- 3/4 tsp. of baking soda
- 3/4 tsp. of organic vanilla
- 3 tbsp. of organic sweet raw cacao nibs
- 2 tbsp. of organic coconut nectar
- 1 egg
- 1/2 organic banana
- Dash of pink himalayan sea salt
- Dash of organic brown sugar
How to make:
Preheat oven to 350 degrees. In a large mixing bowl, combine coconut nectar, banana and coconut oil and blend until creamy. Add egg, vanilla, baking soda and peanut butter, mixing well. Next, stir in oats, cacao nibs and seeds. Scoop tablespoons worth of dough onto a lightly greased cookie sheet, setting them about 2 inches apart. Bake for 11 minutes, until lightly browned on the edges.
